The Biondi Santi production has always been characterised by a great care in the agricultural process, in order to obtain excellent wines of superior quality: green prunings (2/3 times), topping up of the vine branches (4 times), thinning out the grapes (at the end of July after the setting), stripping of the leaves before harvesting. Vintage time at the Greppo estate is considered a very special rite and each grape cluster is selected by hand and examined; only the best ones are employed for the production of Brunello wine, addressed to the cellar and immediately processed. Thanks to the different locations of its vineyards, the Biondi Santi wine company has a wide selection range for the choice of the grapes. During exceptional years, there are two types of Brunello di Montalcino being produced: Brunello "Riserva", with grapes coming from the oldest and best vineyards; and Brunello "Annata", with grapes coming from excellent vinyards of younger age. During non-exceptional years, Biondi Santi only produces Brunello "Annata" wine, whereas during vintage time that are not considered to be of top quality, there's no production of Brunello at all (for example in 1972, 1976, 1984, 2002). In those years the best selection of the wine is bottled as Rosso di Montalcino "Fascia Rossa", after refining one year in a slavonian oak barrel, before a further refining in bottle. The result is a very pleasant, harmonious wine with a fruity bouquet that has to be considered as a "little Brunello". From the younger vineyards of less than 10 years of age comes the Rosso di Montalcino wine. All Biondi Santi bottles, of both Brunello and Rosso di Montalcino, are numbered and vintaged. Beside wine, our estate produces an excellent "extra vergine" olive oil. The olive-yards are spread over 30 hectares of land. The olives are picked up by hand directly from the tree, and immediately grinded with granite grindstones and cold squeezed, restricting acidity down to 0,5 degrees or less. A good part of the cellar is preserved as shaped by Clemente Santi in the 19th century, while being developed and implemented over the years.

Several areas are fitted with cement basins for wine-making, with oak barrels for wine refining before bottling, with big slavonian oak barrels for aging Brunello wine, and a huge bottling area is at hand too. Brunello ages three and a half years in big oak barrels, as specified by the old Production Standards document. Finally all the old great Brunello Reserve bottles are collected inside a room with preserved thermic conditions, always keeping ideal temperature and humidity. The historical 1888 and 1891 vintages, as well as all other great vintage years:

1925, 1945, 1955, 1964, 1968, 1969, 1970, 1971, 1975, 1981, 1982, 1983, 1985, 1988, 1990, 1995, 1997. These bottles are destined to hand down the tradition of Biondi Santi's Brunello wine over the years to come.
